Whole-Grain Pasta with Salmon and Broccoli
Whole-grain pasta with broccoli and tender pieces of salmon in a light lemon sauce. One complete serving.

Ingredients
- 200 g cooked whole-grain pasta
- 100 g skinless salmon fillet
- 100 g broccoli
- 1 tsp olive oil
- 1 tbsp lemon juice
- 1 tsp finely grated lemon zest
- 2 tbsp pasta water
- Salt and pepper, to taste

Cook the pasta
If needed, cook about 75 g dry whole-grain pasta according to the packet. Reserve 2 tablespoons of the cooking water before draining.

Add the broccoli
Cut the broccoli into small florets and cook it with the pasta for the final 4 minutes. Drain both.

Cook the salmon
Pat the salmon dry and season lightly. Heat the oil over medium and cook the salmon for 3–4 minutes per side, depending on thickness, until it flakes easily.

Bring it together
Break the salmon into large pieces. Gently toss the pasta, broccoli, cooking water, lemon juice and zest in the pan.

Serve
Adjust the seasoning and serve immediately so the salmon stays moist.

The starchy pasta water brings the lemon and oil together without needing a heavy sauce.
