Stuffed Bell Peppers with Ground Beef and Quinoa
Oven-baked pepper halves filled with ground beef, quinoa and tomato.

Ingredients
- 2 small bell peppers (approx. 250 g)
- 120 g lean ground beef
- 100 g cooked quinoa
- 100 g tomato passata
- 50 g onion
- 1 tsp olive oil
- 1/2 tsp paprika
- Salt and pepper, to taste

Prepare the peppers
Preheat the oven to 190°C conventional. Halve the peppers lengthwise, remove the seeds and membranes and place in a small baking dish.

Cook the beef
Finely dice the onion. Heat the oil, soften the onion for 2 minutes and cook the beef for 5 minutes until crumbled and fully browned.

Mix the filling
Stir in the quinoa, 60 g of the passata and the paprika. Season and simmer for 2 minutes.

Fill the peppers
Pour the remaining passata into the dish. Fill the pepper halves with the beef and quinoa mixture and cover the dish.

Bake
Bake for 25 minutes, then uncover and cook for another 10 minutes until the peppers are tender and the meat is fully cooked.
Tip
Covering the dish at first traps enough steam to soften the peppers without drying out the filling.
