Small date, almond and cocoa balls for preparing ahead. The batch makes eight balls or four servings.

  • 100 g pitted dates
  • 60 g almonds
  • 1 tbsp unsweetened cocoa powder
  • 1 pinch salt
  • 1–2 tsp water, as needed

Instructions

    Check the dates

    If the dates are firm, cover them with hot water for 10 minutes, then drain very thoroughly. Soft dates can be used straight away.

    Process the mixture

    Process the almonds until fine but still slightly textured. Add the dates, cocoa and salt and pulse to combine.

    Check the texture

    Press a little mixture between your fingers. If it does not hold, add water one teaspoon at a time, using no more than needed.

    Portion

    Roll into 8 equal balls. One serving is 2 balls.

    Chill

    Chill for at least 30 minutes, then store covered in the refrigerator.

Tip

Pulse the processor in short bursts, as continuous blending can turn the almonds into nut butter.
