Instructions

  1. 1

    Mix the pudding

Combine the chia seeds, almond milk and maple syrup in a jar or bowl and stir thoroughly until the seeds are evenly distributed.

  2. 2

    Stir again

Leave to stand for 5–10 minutes, then stir again firmly. This second stir breaks up the clumps that would otherwise settle at the bottom.

  3. 3

    Chill

Cover and refrigerate for at least 3 hours, preferably overnight, until thick and creamy.

  4. 4

    Add the mango

Add the diced mango just before serving so it stays fresh.

Tip

Berries or banana work just as well instead of mango — the base stays the same.
